POTATOES Potato production has increased significantly, growing exponentially from 1861 to the late 1990s before steadying at current levels of 1.3 million tonnes in 2010. Notably in this period the area under cultivation has been relatively stable with the only significant change in area occurring during and around 1945. At state level, potato production and area of cultivation patterns have remained in line with the national recordings. South Australia was the largest potato producer at 359 thousand tonnes in 2010, followed by Tasmania at 333 thousand tonnes.
